Witches Hair with Slow Roasted Cherry Tomatoes
  1. Toss cherry tomatoes with olive oil, fennel seeds, crushed garlic and salt.
  2. Spread tomatoes in a pan just large enough to create a single layer. Roast in a preheated 300 degree fahrenheit oven for 1 hour.
  3. When there is about 10 minutes left for the tomatoes bring a large pot of salted water to boil and cook NUDL’s as per package directions. (3 minutes for “Witches Hair” NUDL’s)
  4. Toss pasta with roasted tomatoes being sure to scrape in all the fennel/oil/garlic. Divide into 2 plates and top with optional goat cheese, parsley, salt & pepper.
